Die Mandeln mit den bitteren Mandeln hineinsch\u00fctten und 1 Minute darin ziehen lassen. Die Mandeln dann in einem Sieb kalt abschrecken, abtropfen lassen und aus den braunen H\u00e4utchen dr\u00fccken. Die Mandeln auf einem Tuch 12 Stunden trocknen lassen. Den Puderzucker sieben. Die Mandeln in der Mandelm\u00fchle fein reiben oder im Mixer zerkleinern. Die Mandeln mit dem Puderzucker mischen. Das Eiwei\u00df leicht verquirlen. Das Rosenwasser, den Rum und nach und nach so viel vom Eiwei\u00df unter die Mandel-Puderzucker-Mischung mengen, dass die Masse formbar, aber feucht ist. Aus der Marzipanmasse kirschgro\u00dfe Kugeln drehen.
