Die Muffinsformen fetten oder Papierf\u00f6rmchen hineinsetzen.<br \/>\nDie Butter zerlassen und abk\u00fchlen lassen. Die Ananas in sehr kleine St\u00fcckchen schneiden.<br \/>\nBeide Mehlsorten, Backpulver, Salz, Zucker und Vanillinzucker in einer Sch\u00fcssel mischen.<br \/>\nIn einer anderen Sch\u00fcssel das Ei, den Ananassaft und die abgek\u00fchlte zerlassene Butter mit dem<br \/>\nSchneebesen verquirlen. Diese Mischung nach und nach am besten mit einem Kochl\u00f6ffel unter die trockenen Zutaten r\u00fchren. Nun die Ananasst\u00fcckchen darunter ziehen.<br \/>\nDie Muffinsformen zu etwa 2\/3 mit Masse f\u00fcllen. Die Muffins im Backofen bei 180\u00b0C etwa 20<br \/>\nMinuten backen. Aus dem Backofen nehmen und etwa 5 Minuten in der Form abk\u00fchlen lassen.
